Combine the flaked fish, mashed potato, softened onion, egg and parsley in a bowl and season well.

Mix gently just until combined, then shape into 8 patties.

Coat each patty in breadcrumbs, pressing to help them stick.

Chill the patties for 15 minutes if time allows, to help them hold together.

Heat the oil in a skillet over medium heat and fry the cakes 3-4 minutes per side until golden and heated through.

Drain briefly on paper towel and serve hot.
