Combine chicken, soy sauce, vinegar, garlic, bay leaves and peppercorns in a pot; marinate 20-30 minutes if time allows.

Place the pot over medium heat and bring to a simmer without stirring the vinegar in too vigorously at first.

Cover and simmer for 20 minutes, turning the chicken pieces occasionally.

Remove the chicken and set aside; reduce the remaining sauce over medium-high heat for 5-8 minutes until thickened.

Optionally, sear the chicken pieces in a splash of oil in a separate pan until browned.
