Rub the cold butter into the flour, turmeric and a teaspoon of salt, leaving visible flecks, then bring together with iced water. Chill 1 hour.

Fry the onion, chilli, thyme and curry powder, then add the beef and brown it well.

Add the stock and breadcrumbs and simmer until thick and moist but not wet. Cool completely.

Roll the pastry thin and cut 15 cm circles.

Fill each with two spoonfuls, fold over and crimp firmly with a fork.

Bake at 200C for 30-35 minutes until deep golden.
Chef's tips
The filling must be cold and thick, or it will steam and split the pastry open.
