Heat your oven to 350ยฐF. Grease a 9-inch springform pan.

Pulse the toasted hazelnuts in a food processor. Grind them finely without turning them into a paste.

Separate the eggs. Beat the yolks, sugar, and melted butter together until pale.

Gently mix the ground hazelnuts, breadcrumbs, vanilla, and baking powder into the yolk mixture.

Beat the egg whites in a separate bowl until stiff peaks stand straight up.

Gently stir the whites into the batter in three batches to keep it airy.

Pour into the prepared pan. Bake for 30-35 minutes until a toothpick comes out clean.

Let the cake cool completely. Remove it from the pan and dust with powdered sugar.
