Instructions

    Gently scrub the potatoes under cold running water to remove loose soil, keeping the delicate skins intact.

    Return the hot potatoes to the dry pan off the heat to steam dry for two minutes.

    Add the diced salted butter and chopped fresh mint directly to the warm pan.

Chef's tips
