Preheat your oven to 375ยฐF.

Mix flour and cold butter until crumbly. Stir in cold water to make a dough, then chill for 20 minutes.

Roll out the dough. Cut it into 6 squares large enough to wrap each peach.

Set a whole peeled peach on each square. Fill the pit hollow with a little sugar and cinnamon.

Wrap the dough around each peach and pinch the seams tightly. Place them in a baking dish.

Stir sugar, water, and cinnamon in a saucepan. Bring to a gentle simmer to make syrup.

Pour the hot syrup around the dumplings in the baking dish.

Bake for 35-40 minutes, spooning syrup over them occasionally. Bake until the pastry is golden and peaches are tender.
