Instructions
- 1
Freeze the ribeye for 30 minutes. Slice it as thinly as possible across the lines of the meat.
- 2
Heat the oil on a griddle or in a large skillet over medium-high heat.
- 3
Add the sliced onion. Cook until soft and golden, about 8 minutes, then push it to the side.
- 4
Add the beef to the hot griddle. Chop it into small pieces with your spatula edge as it cooks.
- 5
Season the beef with salt and pepper. Stir the cooked onions into the meat.
- 6
Split the beef mixture into two portions on the griddle. Place the cheese on top and let it melt.
- 7
Use your spatula to scoop each cheesy portion into a roll.
- 8
Serve right away with fried long hots (spicy Italian chili peppers) if you like.
Chef's tips
Freeze the ribeye for 30 minutes so you can slice it paper-thin. Chop the meat with your spatula on the griddle, and serve quickly before the melted cheese separates.
Storage
Best eaten immediately; leftover meat and onions keep refrigerated for 2 days but the roll will go soft.
Reheating
Reheat meat and onions in a skillet over medium heat and rebuild the sandwich in a fresh roll.
Common mistakes to avoid
- β’Cutting the beef into thick slices instead of thin shavings
- β’Using a roll that is too soft to hold the juicy filling
- β’Cooking the beef for too long until it turns dry and tough
