Instructions

    Pressure cook the soaked rajma (kidney beans) with salt and a little turmeric. Cook for about 30 minutes until very soft.

    Heat ghee (clarified butter) in a kadhai (deep pan). Add cumin seeds and let them sizzle.

    Add onions and fry gently until golden brown.

    Add ginger garlic paste and cook until fragrant. Stir in the tomato puree.

    Add chilli powder and the remaining turmeric. Cook this masala (spice base) until oil separates.

    Add the cooked rajma and its cooking liquid. Simmer for 20-25 minutes, mashing a few beans to thicken the gravy.

    Stir in the garam masala (warm spice blend). Simmer gently for 5 more minutes.

    Ladle the hot rajma generously over warm steamed rice and serve.
