Instructions

Boil the water with salt. Let it cool slightly until warm but still hot to touch.

Gradually stir the pearl millet flour into the hot water with a spoon. Knead by hand into a soft, slightly sticky dough.

If using onion, chilli, and cumin, knead them into the dough now.

Divide the dough into 4-5 equal portions. Keep them covered with a damp cloth.

Wet your palms with water. Pat one portion of dough on a plastic sheet or banana leaf into a thin, 15 cm disc.

Heat a tawa (flat griddle) on medium heat. Carefully place the patted rotte (flatbread) onto it and cook for 2-3 minutes.

Flip the rotte and drizzle a little sesame oil around the edges. Cook until golden brown spots appear.

Press gently with a cloth or spatula for even cooking. Remove from heat and repeat with the remaining dough.

Serve hot immediately, as sajja rotte hardens quickly as it cools.
Chef's tips
Knead the dough while it is still hot so it stays soft and easy to shape. Keep a bowl of water nearby to wet your hands while patting the rotte.

- pearl millet flour โ sorghum (jowar) flour for a similar traditional flatbread
Storage
Best eaten fresh; leftovers can be stored wrapped in a cloth for a few hours only.
Reheating
Reheat briefly on a hot tawa with a few drops of water sprinkled to soften.
