Instructions

Stir the flour, baking powder and salt together, then rub in the lard.

Add the warm water and mix with a fork just until the dough comes together. Do not knead it much.

Rest 10 minutes, then pat out 1.5 cm thick and cut into rounds or squares.

Heat 1 cm of oil in a heavy pan over medium heat.

Fry the pieces for 3-4 minutes a side until deep gold and cooked through at the centre.

Drain briefly and eat warm.
Chef's tips
Medium heat only — hot oil colours the outside before the middle cooks, which is the usual fault.

- frying → bake at 200C for 20 minutes for oven bannock
Storage
Best the day it is made; reheat briefly in a dry pan.
