Instructions
- 1
Rinse the fresh spruce tips gently to wash away any dirt.
- 2
Put the water and sugar in a saucepan. Bring it to a simmer, stirring until the sugar dissolves.
- 3
Add the spruce tips. Simmer gently for 10-15 minutes.
- 4
Take the pan off the heat. Cover it and let it rest for at least 4 hours or overnight.
- 5
Pour the syrup through a fine mesh strainer. Press lightly on the spruce tips to squeeze out the flavor.
- 6
Pour the syrup into a sealed bottle and store it in the refrigerator.
- 7
Fill a glass with ice. Stir about 2 tablespoons of syrup into the sparkling soda water.
- 8
Add a lime slice on top if you like.
Chef's tips
Pick only light green new growth tips in spring because older dark needles taste bitter. Never take too many from one tree; pick just a small amount per branch.
Storage
Refrigerate the syrup in a sealed jar for up to 1 month.
Reheating
No reheating needed; syrup and soda are served cold.
Common mistakes to avoid
- โขPicking dark, older needles instead of bright green tips, which makes the syrup taste bitter.
- โขBoiling the syrup too hard, which can ruin the flavor and turn it bitter.
