Kambu Koozh

Instructions

Mix pearl millet flour with 300 ml of water. Stir well to make a smooth, runny paste without lumps.

Bring the remaining 600 ml water and salt to a boil in a heavy pot.

Pour the millet paste into the boiling water. Stir constantly to keep lumps from forming.

Cook on medium-low heat for 12-15 minutes, stirring often. It is ready when thick, dense, and glossy.

Pour the cooked koozh (millet porridge) into an earthen pot or bowl. Let it cool down completely.

Cover and leave it at room temperature for 6-8 hours or overnight to ferment and turn mildly tangy.

Before serving, stir buttermilk into the fermented koozh until it becomes a thick drink.

Serve cold. Top with chopped shallots, green chilli, and curry leaves.
Chef's tips
Natural fermentation gives koozh its classic tangy taste. In hot weather, this takes only a few hours. Always serve it cold and never reheat it.
