Instructions

Bring the water to a boil with salt and 1 tablespoon of oil.

Add the rice flour all at once and stir quickly. Cover the pan and let it rest for 5 minutes.

Rub a little oil on your hands. Knead the warm dough until it feels smooth.

Pinch off small portions of dough. Shape each piece into a crescent or a roll.

Steam the shaped fara (dumplings) for 12-15 minutes until firm and slightly see-through.

Heat the remaining oil in a pan. Add mustard seeds, curry leaves, green chillies and asafoetida until they sizzle and pop.

Toss the steamed fara in the sizzled spiced oil. Garnish with coriander before serving.
Chef's tips
Knead the dough while it is still warm to keep it smooth and crack-free. Keep some water or oil nearby so the dough does not stick to your hands.
