Mix the grated raw mango and carrot with salt. Let the mixture sit for 10 minutes.

Heat the oil in a small pan. Add the mustard seeds and let them pop.

Add the slit green chillies, curry leaves and asafoetida (a savoury spice). Fry for a few seconds.

Add the turmeric and quickly pour this hot spiced oil over the grated mango-carrot mixture.

Add the sugar and toss everything together well.

Leave it to rest for 10 minutes so the flavours combine before serving.
