Instructions

Put the cooked rice into an earthen or steel pot. Pour in enough water to cover it completely.

Cover the pot and leave it at room temperature overnight to soak and lightly ferment.

Next morning, shallow-fry the sliced okra in mustard oil with a pinch of salt until crisp, if using.

Ladle the soaked rice together with its water into a bowl.

Serve sliced onion, whole green chillies, salt and the fried okra on the side.

Eat by hand. Mix a little onion and chilli into each mouthful of rice.

Use rice that is only lightly fermented, as leaving it longer in warm weather turns it too sour. Enjoy this cooling dish during hot months.
