Rinse the smoked pork briefly in warm water to remove excess soot. Cut it into chunks.

Put the pork and water into a heavy pot. Bring it to a boil.

Add the ginger, garlic and whole dried red chillies to the pot.

Lower the heat and cover the pot. Simmer for 30 minutes until the pork begins to soften.

Add the sliced fermented bamboo shoot and stir well.

Simmer for another 20 minutes until the pork is tender and the flavours blend.

Stir in the crushed perilla seeds if using, for a nutty aroma.

Season with salt and simmer for a final 5 minutes.

Top with chopped spring onion. Serve hot with rice.
