Instructions

Put the pork pieces into a heavy pot. Add water, crushed garlic, ginger and half the salt.

Bring the pot to a boil. Cover and simmer for 25 to 30 minutes until the pork is tender.

Meanwhile, toast the sesame seeds and dried red chillies separately in a dry pan until fragrant.

Pound the toasted sesame seeds and chillies together in a mortar into a coarse powder.

Drain the cooked pork, keeping a little of the cooking liquid aside.

Toss the warm pork pieces with the crushed sesame and chilli mixture.

Add a splash of the saved cooking liquid if the meat looks dry, and add more salt if needed.

Scatter chopped coriander over the top and serve warm.
Chef's tips
Mix the pork with the sesame while it is still warm so the flavours stick well. Roast the sesame seeds over low heat so they do not turn bitter.
