Instructions
- 1
Put the ham hock, onion, and water into a large pot. Bring it to a boil.
- 2
Simmer for 45 minutes to build rich flavor in the broth.
- 3
Add the chopped turnip greens and red pepper flakes.
- 4
Simmer uncovered for 45 minutes to 1 hour. Cook until the greens are very tender.
- 5
Take out the ham hock and pull the meat off the bone. Return the meat to the pot.
- 6
Season with salt and pepper to taste.
- 7
Ladle the greens into bowls with plenty of pot likker (the rich cooking broth).
Chef's tips
Wash the greens in several changes of cold water to wash away all sand and dirt. Save the pot likker to dip cornbread into because it holds the best flavor.
Storage
Refrigerate up to 4 days; flavor deepens overnight.
Reheating
Reheat gently on the stovetop over low heat.
Common mistakes to avoid
- โขNot washing the greens enough, leaving gritty dirt in the pot
- โขRushing the simmer time, which leaves the greens tough
