    Rub the ribs generously all over with the salt and black pepper rub.

    Smoke the ribs over hickory at 250Β°F for about 4 hours until tender.

    Meanwhile, simmer the ketchup, water, vinegar, black pepper, and sugar for 10 minutes into a thin sauce.

    Brush the ribs generously with sauce during the last 20 minutes of smoking.

    Take the ribs off the smoker. Let them rest for 10 minutes.

    Cut between the bones into individual ribs. Serve over slices of white bread with extra sauce.
