Instructions
- 1
Stir the yeast into warm water with a pinch of sugar. Let it sit for 10 minutes until foamy.
- 2
Mix the warm milk, potato flakes, remaining sugar, softened butter, egg, and salt in a mixer bowl.
- 3
Add the yeast mixture and 4 cups flour. Mix into a soft dough, adding the remaining flour as needed.
- 4
Knead the dough for 8 minutes until it is smooth and stretchy.
- 5
Cover the dough and let it rise for 1 hour until doubled in size.
- 6
Press down on the dough to deflate it. Divide it into 24 pieces and shape each into a smooth ball.
- 7
Place the balls on sheet pans and cover them. Let rise for 30-40 minutes until puffy.
- 8
Bake at 375Β°F for 12-15 minutes until golden.
- 9
Brush the warm rolls with plenty of melted butter.
Chef's tips
Tuck the dough into a tight seam on the bottom so the rolls rise into smooth, even domes.
Storage
Store in an airtight container at room temperature up to 3 days.
Reheating
Warm wrapped in foil in a 300Β°F oven for 10 minutes.
Common mistakes to avoid
- β’Letting the dough rise too long, which makes the rolls collapse or taste strongly of yeast
- β’Skipping the melted butter while the rolls are still hot, missing out on the shiny crust
