Instructions

Boil sliced bamboo shoots in water twice. Throw away the water each time to remove natural bitterness.

Grind coconut with cumin seeds and two dried red chillies into a rough paste.

Heat coconut oil in a clay pot. Fry shallots and garlic until golden.

Add the remaining dried red chillies and curry leaves.

Add boiled bamboo shoots, turmeric and salt. Stir well.

Pour in a little water. Simmer for 10 minutes.

Stir in the ground coconut paste. Simmer until the curry thickens slightly.

Let the curry rest for a few minutes before serving.
Chef's tips
Always double-boil bamboo shoots and discard the water, as raw shoots can be bitter and mildly toxic. Fresh shoots picked in the monsoon season give the best texture.
