Instructions

  1. 1

Preheat your oven to 400°F (204°C). Line a sheet pan with parchment paper.

  2. 2

Bring the water, butter, and salt to a boil in a saucepan on the stovetop.

  3. 3

Take the pan off the heat. Stir in all the flour at once until it forms a smooth ball.

  4. 4

Put the pan back on low heat. Stir for 1-2 minutes to dry out the dough slightly.

  5. 5

Move the dough to a mixing bowl. Beat in the eggs one at a time until the dough is shiny.

  6. 6

Pipe or spoon large mounds of dough onto the sheet pan. Space them well apart.

  7. 7

Bake for 35 minutes until puffed and deep golden. Do not open the oven door early.

  8. 8

Let them cool completely, then slice each in half. Fill generously with sweetened whipped cream and dust with powdered sugar.

Chef's tips

Keep the oven door closed while baking so the puffs do not collapse. Whip the cream right before filling so it stays thick.

Storage

Store unfilled puffs at room temperature 1 day, or freeze up to a month; fill just before serving.

Reheating

Re-crisp unfilled shells in a 350°F oven for 5 minutes if softened.

Common mistakes to avoid

  • Baking for too little time, which leaves the inside doughy and makes the puffs deflate
  • Adding the whipped cream too early, which makes the pastry soggy

Serving suggestions

Serve with an extra dusting of powdered sugar on topEnjoy alongside a hot cup of coffee
