Rinse the smoked beef pieces in warm water to wash away excess charred bits.

Put the beef into a heavy pot with water, ginger, garlic and onion.

Bring the pot to a boil. Cover with a lid and simmer gently for 30 minutes until the meat softens.

Add the fermented bamboo shoot and crushed dried king chilli.

Keep simmering uncovered for 15 minutes so the flavours blend together well.

Stir occasionally and check if the beef is tender. Simmer for longer if needed.
