Soak the smoked yak cheese cubes in warm water for 15 minutes so they soften.

Heat butter in a pot. Fry the garlic and ginger gently until fragrant.

Pour in water. Bring it to a gentle boil.

Drain the softened cheese cubes. Add them to the pot.

Simmer gently for 10 minutes. Let the cheese soften further without fully melting.

Add the chopped local greens. Simmer for another 5 minutes.

Season with salt to taste. Keep in mind that the cheese is already salty.

Scatter chopped spring onion over the top. Serve hot.
