Whisk the lime juice, half the oil, garlic, cumin, and chili powder together. Marinate the steak in the fridge for at least 2 hours or overnight.

Take the steak out of the marinade and pat it dry. Season it with salt and pepper.

Heat a cast-iron skillet or grill until it is smoking hot. Sear the steak for 3–4 minutes per side for medium-rare.

Let the steak rest for 5 minutes. Slice it thinly across the direction of the meat lines.

Add the remaining oil to the same hot skillet. Cook the peppers and onions for 5–6 minutes until blackened in spots but still crisp.

Put the sliced steak back into the skillet briefly to mix. Serve it sizzling hot with warm tortillas.
Chef's tips
Slice the cooked steak thinly across the direction of the meat lines. Skirt steak has long fibers and will be chewy if cut along the lines.

Refrigerate cooked meat and vegetables separately in airtight containers for up to 3 days.
Reheating
Reheat quickly in a very hot skillet to re-sear; avoid microwaving, which turns the steak grey and tough.
