Instructions

Knead whole wheat flour, a little salt, 1 tbsp mustard oil, and water into a firm dough. Rest it for 20 minutes.

Mix sattu (roasted gram flour) with pickle masala, chopped chillies, ginger-garlic, nigella seeds, a splash of mustard oil, salt, and a little water.

Divide the dough into balls and flatten them. Put some sattu filling in the centre and seal into a smooth round ball.

Roast the stuffed balls over hot coals or in a very hot oven. Turn them often until deeply charred and cooked through.

Meanwhile, roast the brinjal and tomato directly over a flame. Cook until the skin blisters and the flesh softens.

Boil the potatoes. Peel and mash them together with the peeled roasted brinjal and tomato.

Season the mash with mustard oil, chopped green chilli, coriander, and salt to make the chokha (vegetable mash).

Crack open the hot litti. Dip generously in melted ghee (clarified butter) and serve with the chokha.
Chef's tips
Dunking the hot litti in ghee immediately after roasting keeps it moist inside. Roasting the brinjal directly over an open flame gives the chokha its essential smokiness.

Storage
Litti keeps for a day at room temperature; chokha is best eaten fresh but keeps refrigerated for a day.
