Instructions

    Put the sattu (roasted gram flour) into a glass or jug. Add a little water and whisk into a smooth paste without lumps.

    Slowly whisk in the remaining chilled water. Mix well until it is fully combined and frothy.

    Stir in the lemon juice and roasted cumin powder. Mix well.

    Add the black salt and chopped green chilli if using. Adjust the seasoning to your taste.

    Add more water if it is too thick. Taste and adjust the salt and tanginess.

    Pour into glasses and garnish with mint. Serve immediately.

Always mix sattu into a little water first to prevent lumps. Serve straight away because sattu settles quickly.
