Place the goat pieces into a large bowl with 2 tablespoons of curry powder, salt, black pepper, garlic, ginger, and spring onions.

Rub the marinade thoroughly into the meat and refrigerate for at least 4 hours, or preferably overnight.

Heat the vegetable oil in a large heavy casserole dish on medium heat on the hob.

Add the remaining 1 tablespoon of curry powder and fry for 1 minute until fragrant to cook out the raw spices.

Add the marinated goat pieces in batches and brown on all sides for about 6 to 8 minutes.

Stir in the chopped onions, fresh thyme sprigs, and crushed allspice berries.

Pour in the boiling water to just cover the meat, scraping up any caramelised bits from the base of the dish.

Nestle the whole Scotch bonnet pepper on top of the liquid, taking care not to puncture the skin.

Bring to a gentle boil, then cover with a tight-fitting lid and reduce the heat to low.

Simmer very gently on the hob for 2 hours until the goat is tender and pulling away from the bone.
