Sanna (Steamed Rice Cakes)

Instructions

Drain the soaked rice. Grind it with cooked rice and grated coconut into a smooth, thick batter, adding water as needed.

Dissolve sugar and yeast (or toddy) in a little warm water. Stir this into the batter.

Cover the batter and leave it in a warm place for 6-8 hours or overnight until doubled and bubbly.

Stir in salt gently. Mix carefully so you do not knock the air out of the batter.

Grease your sanna (steamed rice cake) or idli moulds. Fill each mould two-thirds full with the fermented batter.

Steam for 15-18 minutes. A skewer inserted into the centre should come out clean.

Let them cool slightly. Remove them from the moulds and serve warm.
Chef's tips
Toddy gives a gentle sweetness and lighter texture than yeast, but use whichever is available. Do not ferment for too long or the sanna can taste too sour.

Steam briefly for 3-4 minutes to soften and warm through.
