Pressure cook the dals with water, turmeric and salt until fully soft, about 4-5 whistles.

Mash the dal lightly. Stir in hot water if it is too thick, then keep it warm.

Heat ghee (clarified butter) in a small pan. Add cumin seeds and dried red chillies until they sizzle.

Add sliced garlic. Fry until it turns golden and smells fragrant.

Add chopped onion and cook until browned. Add chopped tomato and cook until softened.

Pour this spiced oil mixture over the cooked dal. Simmer for 5 minutes so the flavours combine.

Dhaba-style flavour comes from letting the garlic and onions brown well in the tadka (sizzling spices) rather than staying pale. Finish with a second smaller tadka just before serving for extra aroma if desired.
