Instructions

Wash the gundli millet and moong dal together thoroughly.

Put them into a pressure cooker or heavy pot with water, turmeric and salt.

Cook until the millet and dal become soft and mushy like porridge.

Heat ghee (clarified butter) in a small pan. Add cumin seeds and green chilli, letting them sizzle.

Pour this tadka (sizzled spice mixture) over the cooked khichdi and mix well.

Stir in a little hot water if the khichdi feels too thick.

Simmer gently for a few more minutes to let the flavours combine.

Serve hot with a drizzle of extra ghee.
Chef's tips
Gundli cooks similarly to rice but may need slightly more water and time to soften completely. Adjust the dal-to-millet ratio for a thicker or looser texture.
