Toast the sesame seeds in a dry pan over low heat. Cook until they smell fragrant and pop lightly.

Add the dry red chillies to the same pan. Toast them gently for 1 minute.

Let the roasted sesame seeds and chillies cool down slightly.

Grind them with garlic, tamarind pulp, salt and a little water into a coarse paste.

Stir in a little extra water if you need a thinner consistency.

Mix in a drizzle of mustard oil for extra flavour before serving.
