Boil the sliced bamboo shoots in water with a pinch of salt for 15-20 minutes to remove bitterness. Drain them well.

Heat mustard oil in a kadai (deep Indian wok) until it smokes lightly.

Add mustard seeds and dry red chilli. Let them sizzle and pop.

Add chopped onion and garlic. Fry them gently until they turn golden.

Add tomato, turmeric and salt. Cook until softened into a light masala (spiced mix).

Add the boiled bamboo shoots. Mix well to coat them completely in the masala.

Add a splash of water and cover with a lid. Simmer for 10-12 minutes until flavours blend.

Serve hot with steamed rice.
