Instructions
- 1
Whisk the curd well until it is completely smooth.
- 2
Pour in chilled water bit by bit while whisking. Keep whisking until it is thin and frothy.
- 3
Stir in the grated ginger, chopped green chilli, roasted cumin powder, black salt and salt.
- 4
Add the curry leaves. Mix everything well.
- 5
Chill briefly in the fridge. Pour the drink into glasses.
- 6
Top with fresh coriander leaves before serving.
Chef's tips
Use slightly sour, well-set curd for the best traditional flavour. Whisk hard or use a hand blender to get plenty of froth.
Ingredient substitutions
- black salt → extra regular salt
Storage
Best consumed fresh; store refrigerated for up to a day.
Reheating
Not applicable; serve chilled.
Common mistakes to avoid
- •Adding too little water, which makes the chaas (spiced buttermilk) too thick instead of traditionally light and thin.
