Instructions

Stir the jaggery (unrefined cane sugar) in warm water until it melts. Strain the liquid to remove any bits.

Put the rice flour into a mixing bowl. Stir in the jaggery water to make a thick batter.

Add the mashed banana and a pinch of salt if using. Stir well until the batter is smooth.

Leave the batter to rest for 15 minutes so the rice flour absorbs the liquid.

Heat oil in a deep pan over medium heat until it is hot.

Drop spoonfuls of batter into the hot oil. Gently flatten each one slightly with the back of the spoon.

Fry on medium heat until golden brown on both sides, turning them over once.

Lift them out onto paper towels to drain. Sprinkle with black sesame seeds if you like.

Serve warm as a tea-time snack.
Chef's tips
Fry on medium heat so the inside cooks fully without burning the sweet jaggery on the outside. Adding mashed banana gives extra softness and sweetness.
