Instructions

    Heat oil in a heavy-bottomed pot. Fry half the sliced onions until deep golden and crisp, then set aside for garnish.

    In the same oil, fry the remaining onions until soft. Add the ginger-garlic paste and green chillies.

    Add the chopped tomato. Cook until it breaks down.

    Stir in the malvani masala (spice blend) and turmeric. Cook for 2 minutes.

    Add the prawns. Cook for 3-4 minutes until they turn pink and are half-cooked.

    Add the drained soaked rice. Mix gently to coat it with the masala (spice mix).

    Pour in coconut milk, water, and salt. Cover and cook on low heat for 15-18 minutes until rice and prawns are cooked through.

    Fluff the rice gently. Top with the fried onions and coriander, and serve hot.

Add prawns slightly early since they cook fast and can turn rubbery if overdone at the end. Use fragrant local rice like ambemohar for the most authentic aroma.
