Stir cornmeal into boiling water and cook briefly until thickened. Stir in molasses and butter, then let cool until lukewarm.

Dissolve yeast in the lukewarm water. Let it sit until foamy, about 5 minutes.

Mix the cornmeal mixture, yeast mixture, and salt together in a large bowl.

Slowly add flour and stir until a soft dough forms.

Knead the dough for about 8 minutes until smooth and stretchy.

Put the dough in a greased bowl and cover it. Let rise until doubled, about 1.5 hours.

Punch down dough and shape into a loaf. Place in a greased loaf pan and let rise until doubled, about 45 minutes.

Bake at 350Β°F for 35-40 minutes. It is done when deep golden and sounds hollow when tapped.

Chef's tips
Make sure the cornmeal mixture cools to lukewarm before adding yeast so the heat does not kill it. A long, slow rise gives the bread better flavor and texture.
