Instructions

    Peel the yam. Cut it into small cubes.

    Boil the cubes in salted water for 5-6 minutes until just tender but firm. Drain and pat dry thoroughly.

    Heat oil in a kadhai (deep pan). Deep-fry the yam cubes in batches until golden and crisp on the outside.

    Drain on paper towels. Toss immediately with chilli powder, chaat masala (tangy spice blend), black salt and salt.

    Squeeze fresh lemon juice over the top. Toss again to coat evenly.

    Serve hot in a paper cone with a drizzle of green chutney and coriander.

Chef's tips

Pat the boiled yam completely dry before frying to prevent oil splatter and ensure crispness. Toss the spices on while the yam is piping hot so they stick well.

Best eaten immediately; does not store well once fried.
