Instructions

  1. 1

Drain the soaked urad dal. Grind it with very little water into a thick, fluffy batter.

  2. 2

Beat the batter briskly by hand for a few minutes. A small ball should float when dropped in water.

  3. 3

Gently mix in green chillies, ginger, curry leaves, crushed pepper, onion, asafoetida and salt.

  4. 4

Heat oil for deep frying over medium-high heat.

  5. 5

Wet your hands and take a small portion of batter. Flatten it into a disc and make a hole in the centre.

  6. 6

Slide the shaped vada (crispy lentil fritter) gently into the hot oil.

  7. 7

Fry, turning occasionally, until golden brown and crisp on all sides.

  8. 8

Drain on paper. Serve hot with coconut chutney or sambar (spiced lentil stew).

Chef's tips

Grinding with very little water and beating the batter well makes the vadas light and crisp. Keep a bowl of water nearby to wet your hands before shaping each vada.

Ingredient substitutions

  • urad dal โ†’ a mix of urad and chana dal for a slightly different texture (non-traditional)

Storage

Best eaten fresh; not recommended for storage.

Reheating

Reheat in an oven or air fryer to restore crispness.

Common mistakes to avoid

  • โ€ขGrinding with too much water, which makes the batter runny and soaks up excess oil.

Serving suggestions

Serve with coconut chutney, or dunked in hot sambar (spiced lentil stew) as sambar vada.
