- 4
Heat oil in a kadai (deep curved pan) over medium heat until hot.
- 5
Carefully drop spoonfuls of the vegetable batter into the hot oil.
- 6
Fry the fritters, turning them now and then. Cook until they are golden brown and crisp on all sides.
- 7
Lift them out using a slotted spoon. Drain the fritters on kitchen paper.
- 8
Serve hot with green chutney or a cup of plain tea.
Chef's tips
Make sure the batter stays thick so the fritters hold their shape and become crisp. Fry in small batches to keep the oil at the right temperature.
Ingredient substitutions
- potato โ pumpkin or banana flower slices
Storage
Best eaten fresh; not suited to storing.
Reheating
Reheat briefly in a hot pan or oven to restore crispness.
Common mistakes to avoid
- โขMaking the batter too thin and watery, which causes the fritters to fall apart in the oil.
