Grind the soaked mustard seeds, garlic, and green chilli into a smooth paste.

Heat mustard oil in a kadai (deep pan). Add panch phutana (five-spice blend) and let it crackle.

Add the chopped onion, if using. Fry gently until soft and translucent.

Add the mustard paste and turmeric. Cook on low heat until fragrant.

Add the cleaned mushrooms. Stir well until they are evenly coated in the masala (spice mixture).

Cover the pan and cook on medium heat until the mushrooms release their natural juices.

Once the juices reduce, simmer gently until the gravy thickens slightly.

Adjust the salt to your taste. Drizzle a little raw mustard oil over the top before serving.
