Instructions

    Make small cuts in the brinjal (aubergine) in a few places. Rub it lightly with oil.

    Roast directly over an open flame or grill, turning often. Cook until the skin is charred all over and soft inside.

    Let it cool slightly, then peel off the charred skin. Mash the flesh thoroughly with a fork.

    Add chopped onion, garlic, green chillies, and roasted mashed tomato if using.
