Instructions

  1. 1

Boil the whole potatoes until a fork slides in easily. Peel them while they are still warm.

  2. 2

Put the potatoes in a bowl. Mash them roughly by hand, leaving chunky pieces.

  3. 3

Add the chopped onion, garlic and green chillies to the warm mash.

  4. 4

Pour raw mustard oil over the mixture. Mix well so the warm potatoes soften the sharp oil flavour.

  5. 5

Add salt, coriander and a squeeze of lemon if using.

  6. 6

Serve at room temperature alongside litti (baked wheat balls) or dal-rice.

Chef's tips

Mash the potatoes while warm so they soak up the mustard oil and garlic flavour. Adjust the raw garlic to your taste.

Ingredient substitutions

  • mustard oil โ†’ any pungent cold-pressed oil, though flavour changes

Storage

Refrigerate for up to 2 days in an airtight container.

Reheating

Best served at room temperature; not typically reheated.

Common mistakes to avoid

  • โ€ขMashing the potatoes into a smooth paste instead of keeping them chunky and rustic.

Serving suggestions

Classic pairing with litti (baked wheat balls), or as a side with plain dal-chawal (lentils and rice).
