Mix the rice flour, chopped onion, green chilli, ginger and salt together in a bowl.

Slowly pour in the zutho (rice beer). Stir well to make a thick batter.

Leave the batter to rest for 10 minutes so the flavours blend.

Heat oil in a pan for deep frying until it is medium-hot.

Carefully drop spoonfuls of the batter into the hot oil.

Fry for about 3โ4 minutes per batch. Turn until golden brown and crisp on all sides.

Lift them out with a slotted spoon. Drain on paper towels.

Scatter chopped coriander leaves on top and serve warm.
Chef's tips
Do not put too many fritters in the pan at once. This cools the oil and makes them greasy.
