Boil the soaked chana dal until soft. Drain well and coarsely grind or mash it.

Heat mustard oil in a pan and sizzle the cumin seeds. Add ginger and green chillies, frying briefly.

Add the mashed dal, salt and coriander leaves. Cook for 3-4 minutes until dry, then let the filling cool.

Boil water with a pinch of salt and pour over the rice flour. Stir into a dough and knead while warm until smooth.

Take small portions of dough. Flatten each into a small disc using your palms or a rolling pin.

Place a spoonful of dal filling on each disc. Fold into a half-moon shape and pinch the edges to seal.

Arrange the pitha (dumplings) in a steamer lined with a damp cloth. Steam for 12-15 minutes until translucent.

Serve warm. Enjoy plain or with a mustard oil-chilli dip.
Chef's tips
Knead the rice flour dough while it is still warm to keep it soft and easy to shape. Keep the dal filling dry so the dumplings do not turn soggy.
