Instructions

    Preheat the oven to 160C (325F).

    Score the ham skin in a diamond pattern and stud with cloves if using.

    Place the ham in a roasting pan and bake, covered, for about 90 minutes, or until warmed through.

    Whisk together the maple syrup, mustard, brown sugar and vinegar for the glaze.

    Uncover the ham, brush generously with the glaze, and increase the oven to 200C (400F).

    Bake uncovered for 20-25 minutes, basting every 8-10 minutes, until deeply caramelized.

    Rest for 15 minutes before carving.
