Instructions

    Preheat your fan oven to 150°C (170°C conventional) and line a 20cm square cake tin with greaseproof paper.

    Add the butter, black treacle, golden syrup, and dark muscovado sugar to a medium saucepan.

    Set the pan on the hob over a low heat, stirring until completely melted and smooth.

    Remove the pan from the heat and gently pour in the Newcastle Brown Ale.

    Sift the plain flour, bicarbonate of soda, ground ginger, cinnamon, and mixed spice into a large mixing bowl.

    Beat the eggs and whole milk together in a jug until smooth.

    Pour the warm ale syrup and beaten egg mixture into the dry flour bowl.

    Whisk the ingredients gently together until you have a smooth, runny, glossy batter.

    Bake for 45 to 50 minutes until a skewer inserted in the middle comes out clean.

Like parkin, this cake improves immensely with age. Wrap the cooled gingerbread tightly in greaseproof paper and foil, then store it for two days before slicing so it turns deeply sticky and moist.
