Chef's tips
Use the youngest, smallest vegetables you can find so nothing needs peeling and everything cooks at close to the same rate.
Ingredient substitutions
- heavy cream โ half-and-half for a lighter dish
- fresh peas โ frozen peas added straight in for the last 2 minutes
Storage
Refrigerate in a covered container for up to 2 days.
Reheating
Reheat gently on the stovetop over low heat, stirring often.
Common mistakes to avoid
- โขBoiling hard after the cream goes in, which can split it
- โขOvercooking the peas until they turn grey
