Instructions

    Simmer the apples in the cider until completely collapsed, about 40 minutes.

    Blend or pass through a sieve to a smooth purée.

    Return to the pot with the sugar, spices and lemon juice.

    Cook very low, uncovered, for 4 to 5 hours, stirring occasionally, until dark and thick enough to mound on a spoon.

    Check the sweetness and spice.

    Pot into hot sterilised jars and seal.
