Instructions
- 1
Put the apples and apple cider into a large heavy pot.
- 2
Bring the pot to a gentle simmer and cover it. Cook for 30 minutes until the apples turn very soft.
- 3
Blend the mixture with a hand blender until it is completely smooth.
- 4
Stir in the brown sugar, cinnamon, cloves, allspice, lemon juice, and salt.
- 5
Cook uncovered over low heat for 3-4 hours, stirring occasionally. Stop when it is thick and dark brown.
- 6
Place a spoonful on a plate to test it. It should hold its shape without leaking liquid around the edges.
- 7
Ladle the hot apple butter into clean, sterilized jars and seal them.
- 8
Put the jars in the refrigerator or process them in a boiling water bath for pantry storage.
Chef's tips
Cook gently on low heat and stir once in a while until the butter mounds on a spoon without running off.
Storage
Store in sterilized jars, refrigerated, up to 3 weeks, or process in a water bath for shelf-stable storage.
Reheating
Not applicable; serve at room temperature or chilled.
Common mistakes to avoid
- β’Using heat that is too high, which burns the bottom of the pot.
- β’Forgetting to stir often near the end when the butter thickens quickly.
